Olive Oil	Oil extracted from olives. Particularly associated with the Mediterranean, Olive Oil is particularly associated with Greece and Italy, but it is used extensively throughout the region. It has a very high level of monounsaturated fat and is seen as a healthy food in moderation. Good olive oil is sold at a premium price outside the region which makes is a luxury item - a pity when the alternatives tend to be far less healthy.

Strong Flour	Strong Flour, as opposed to other types of flour, has a high protein content which produces high levels of Gluten. This gives bread it's texture.
