What I am looking for here is butchers that care more about their meat than even do their customers. Butchers who hang meat as a matter of course, not a special request, butchers that source locally as much as is possible. Butchers that try and find that balance between the best and a fair price so that they do not become too elitist. Butchers who undestand game, like to get their customers to try new things, will go that little bit further to be the best, not just another name on the high street.

Not asking for much am I? 

They are out there, I know they are.
